In the temple town of Kumbakonam, Tamil Nadu, mornings begin with the rhythmic clink of a brass davara-tumbler and the dark, slow drip of decoction from a stainless-steel filter. Born in the agraharams that surround the great Adi Kumbeshwarar and Sarangapani temples, this brewing ritual turned a simple bean into a cultural kaaviyam.
